HOMEMADE ROASTED PUMPKIN SOUP RECIPE – WINTER COMFORT FOOD

Yesterday evening I suddenly craved for a big bowl of Winter comfort food. It was raining, leaves were falling from the trees, streets were covered in yellow, red and brown… I decided to make my delicious homemade Pumpkin Soup.

For Pumpkin Soup à la Danique, you need the following ingredients:

  • – 2 Bouillon cubes
  • – 1 Pumpkin
  • – 1 Garlic
  • – 2 Shallots
  • – Fresh parmesan
  • – Sea salt
  • – Black pepper
  • – Olive oil
  • – 2 spoons of creme fraîche
  • – Blender
  • – Baking dish

Boil 1 liter water and add the 2 bouillon cubes to make a vegetable broth. In the meanwhile, slice the pumpkin in parts (don’t peel the skin) and hollow out the middle part. Set the oven to 200 degrees Celsius and put in the pumpkin slices together with some olive oil, pepper and salt. Let it roast for ±15 minutes.

Slice the shallots and bake them in a little bit olive oil. Put the shallots into the blender together with a few cubes of fresh parmesan and a 1 toe of squeezed garlic. Add the roasted pumpkin and blend the ingredients until you get a nice and smooth mixture.

Now it’s time to add a little vegetable broth to the mixture. Personally I prefer a thick soup, but the more broth you add, the thinner it gets. Blend again and flavour some more with sea salt and pepper.

Garnish with a spoon of creme fraîche on top and some freshly grated parmesan.

Now pour yourself a good glass of wine and enjoy this comforting soul food!
