A couple of days ago I got inspired by popsicles and today I’m posting my own recipe for healthy, tasty and low fat ice pops. It’s a tropical ice pop (I’m calling it the “Tropsical”) that is super easy and fun to make! ‘Things-to-do-with-kids TIP’: making ice pops is also a fun thing to do with the kids in Summer and Holiday season :).

For the “Tropsical” you need:

  • – A blender
  • – 250 ml coconutcream
  • – 100 ml coconutwater
  • – 100 ml freshly squeezed orange juice
  • – 1/2 fresh pineapple
  • – 2 large bananas
  • – 1 bag of vanilla sugar
  • – Rosehip syrup (or any other flavour of your choice)

Take the whole pineapple, slice the skin, remove the core and cut the pineapple into pieces. Take half of the pieces and put them in a bowl. Then peel and slice the bananas and add them to the pineapple pieces. Now add the vanilla sugar and coconut cream, and blend it until you have a smooth creamy mixture.

Now pour the coconut water and orange juice in the mix and blend it al together. Take the ice pop molds and pour in a first layer of the mixture. Place the sticks in the mixture and put the molds in the freezer until this first layer is frozen. Then create a second layer by pouring some rosehip syrup on top of the frozen layer. Put it back in the freezer. When the second layer is frozen you end with a third layer by pouring over the mixture again.

Freeze it for the last time and your healthy treat is ready :). Enjoy!
